Creamy Zingy Goat Cheese Dressing

Combine into a food processor:
4 oz. local goat cheese, room temperature
¼ cup whole milk
2 teaspoons champagne vinegar
1 teaspoon grainy mustard
1 tablespoon minced cilantro
1 tablespoon minced parsley
Pinch of salt, pepper, & lemon zest

Thoroughly combine ingredients, add more milk to thin the dressing if desired.

Makes 1 cup
